Za’atar—also spelled Zahtar—is a fragrant Middle Eastern herb-and-spice blend used as a condiment and versatile seasoning. It delivers herbal depth, gentle acidity and nutty crunch, perfect for finishing dishes or mixing with olive oil as a dip.

Culinary uses
- Dip & drizzle: stir into good olive oil for bread dipping or to finish warm flatbreads.

- Vegetables: toss with roasted cauliflower, carrots or potatoes right out of the oven.
- Proteins: quick rub for chicken, lamb or fish; add just before or after cooking.
- Dairy: fold into yogurt or labneh for a speedy table sauce.
How to use
- Olive-oil dip: 1 Tbsp za’atar per 3 Tbsp olive oil; adjust to taste.
- Yogurt sauce: 2 tsp per 250 g yogurt, plus lemon and salt if needed.
- Quick rub: ~2–3 tsp per 500 g meat or vegetables, with a little oil.
- Finish, don’t scorch: add late or off-heat to preserve aroma and color.
