Za’atar (Zahtar)

Arabian Seasoning

Za’atar—also spelled Zahtar—is a fragrant Middle Eastern herb-and-spice blend used as a condiment and versatile seasoning. It delivers herbal depth, gentle acidity and nutty crunch, perfect for finishing dishes or mixing with olive oil as a dip.

  • Profile: savory herbs, lemony tartness, toasted nuttiness
  • Best for: flatbreads, hummus, grilled meats, roasted vegetables, labneh & salads
  • Use style: finishing sprinkle, table condiment, quick rub or marinade base

Culinary uses

  • Dip & drizzle: stir into good olive oil for bread dipping or to finish warm flatbreads.
  • Hummus & bowls: sprinkle over hummus, grain bowls and chopped salads.
  • Vegetables: toss with roasted cauliflower, carrots or potatoes right out of the oven.
  • Proteins: quick rub for chicken, lamb or fish; add just before or after cooking.
  • Dairy: fold into yogurt or labneh for a speedy table sauce.

How to use

  • Olive-oil dip: 1 Tbsp za’atar per 3 Tbsp olive oil; adjust to taste.
  • Yogurt sauce: 2 tsp per 250 g yogurt, plus lemon and salt if needed.
  • Quick rub: ~2–3 tsp per 500 g meat or vegetables, with a little oil.
  • Finish, don’t scorch: add late or off-heat to preserve aroma and color.
