Licorice

Licorice is the root of Glycyrrhizin glabra (legume) and has its Origin in southern Europe and Asia. In Southern Italy (Calabrien) licorice is very popular and chewed on as a mouth refreshner.

The active principle of licorice the glycyrrhizin is 50 times sweeter than sucrose.

Utilization of Licorice

Licorice extract is made by boiling the roots and subsequently evaporating all the water.

The licorice extract can be used like an aroma in Ice cream or candies.
