Dried elderflowers for tea and cooking

Elderflower

Sambucus spp. — fragrant, floral & honeyed

The elder tree (Sambucus) grows up to ~7 m and bears white-yellowish blossoms from May to July. Dried elderflowers add a gentle, floral sweetness to teas, cordials, desserts and light savory dishes.

  • Best for: tea/tisanes, cordials & syrups, jellies/jams, panna cotta, cakes, rice & light sauces

Brewing & Syrup

  • Elderflower tea: 1–2 tsp (≈0.5–1 g) per 250 ml water at ~95 °C; steep 5–7 min; strain.
  • Simple syrup / cordial base: 10–15 g dried blossoms per 500 ml water; infuse 20–30 min (warm), strain. Combine infusion 1:1 with sugar for syrup; add lemon to taste.

Culinary uses

  • Desserts: infuse cream, milk or syrup for panna cotta, ice cream and cakes.
  • Jams & jellies: steep blossoms in the fruit base; strain before gelling.
  • Rice & grains: perfume pilafs by infusing the cooking liquid, then strain.
  • Beverages: mix syrup with sparkling water; add a splash to spritzers or mocktails.

How to use

  • Infuse & strain: for clear flavor without petals in the final dish.
  • Add late/off-heat: preserves delicate aromas.
  • Fresh ↔ dried guide: about 1 tsp dried ≈ 1 Tbsp loosely packed fresh blossoms (adjust to taste).

  • Infusions/creams: 1–2 tsp dried per 250 ml dairy; steep warm 10–15 min; strain.
  • Jams/jellies: 1–2 Tbsp dried per 1 kg fruit (in a sachet), remove before filling.
  • Baking: 1–2 tsp dried (finely crumbled) per 500 g batter or dough.

Pairings

Lemon, lime, orange zest, vanilla, honey, strawberry, gooseberry, apple & pear; complements light creams, yogurt and sparkling beverages.
