Varieties of Pepper
Pepper : Black, White, Green
Pepper is the fruit of a flowering vine of the family
Piperaceae which grows in the tropics. The Pepper Plant starts
carrying berries after its 3rd year two times a year for thirty
years. The pepper plant can grow up to 10 meters if its
supporting tree grows that high. For commercial growing the
Pepper plants are kept under a high of 4 meters. The Pepper
plant needs shade and lots of water but should not stand in it
or she will die.
Black Pepper, White Pepper
and Green Pepper come from the same Plant.
The green Pepper is made from unripe berries. The fresh
green pepper berries have to be preserved in brine or vinegar,
or by freeze drying. Green pepper is used in desserts or
in the green pepper sauce.
The White Pepper
is made from the fully ripe pepper berry. After harvest the
berries are soaked over a couple of days in fresh water where
the outer shell of the berry softens and loosens which leaves
the heart of the berry. The White pepper is the dried under the
sun.
The Black Pepper
is made from the fully ripe
pepper berry. After harvest the berries are directly dried under
the sun where the originally green outer shell of the pepper
turns black.The
black pepper is best used in long cooking meats. The piperin
gives a nice woody taste to the meals.
Pepper is not just Pepper
Pepper differs greatly in taste. Pepper is generally named after
the port of departure or the region of origin.
Pepper should be bought as grains and ground just before use.
The best know pepper is the Penja
Pepper. This pepper grows on volcanic soil. The volcanic soil is
very nutritious for the plant.
