Licorice
Licorice is
the root of Glycyrrhizin glabra (legume) and has its Origin in
southern Europe and Asia. In Southern Italy (Calabrien) licorice
is very popular and chewed on as a mouth refreshner.
The active principle of
licorice the glycyrrhizin is 50 times sweeter than sucrose.
Utilization
Licorice
extract is made by boiling the roots and subsequently
evaporating all the water.
